Preheat the oven to 350°F. Line a muffin pan with paper liners.
Blend graham crackers into fine crumbs, then mix with sugar and butter. Press into muffin liners and bake for 5 minutes.
Beat cream cheese until smooth. Add sugar, creams, vanilla, and egg; mix until combined. Fold in flour and salt.
Spoon mixture into crusts. Bake for 18-20 minutes. Let cool for 1 hour, then chill in the fridge for another hour.
Top with cherry pie filling and optional whipped cream.
