Lamb shanks with some pretty fresh fruits, soft fruits and dried fruits

Ingredients :
2 medium-sized lamb shanks (the whole thing weighed 1.7kg at the butcher)
2 tbsp. to s. cider vinegar (or wine vinegar)
1 tbsp. to s. honey
Spices: 1 tbsp. teaspoon of tajine spices + 2 small cinnamon sticks + 1 tbsp. level coffee of cumin seeds from La Cuisine des Epices
2 white onions
A few cloves of garlic
Some pretty fresh fruits, soft fruits and dried fruits: fresh figs, soft dates, raisins, almonds…
10cl of white wine
10cl of chicken stock (1/2 cube of chicken stock diluted in 10cl of hot water)
Salt, oil, butter
