Meatball Soup Recipe

This meatball soup features a rich tomato-based broth infused with Italian seasonings, pasta noodles, spinach, and bell peppers. Your family will love it topped with a dollop of ricotta and some parmesan cheese!

Ingredients

Meatballs
– 1 egg, beaten
– ½ cup heavy cream (or milk)
– ½ cup Italian breadcrumbs
– ¼ cup grated Parmesan
– 3 cloves garlic, minced
– 1 tsp salt
– ½ tsp pepper
– ½ lb ground beef (80% lean)
– ½ lb ground pork

Soup
– 1 tablespoon olive oil
– 1 tablespoon butter
– 1 yellow onion, diced
– ½ cup bell peppers, diced (red or green)
– 3 cloves garlic, minced
– 2 tablespoons tomato paste
– 3 cups chicken broth
– 1 ½ cups beef broth (or sub chicken broth)
– 2 (14.5 oz) cans diced tomatoes, undrained
– 1 teaspoon hot sauce (optional)
– 1 teaspoon Worcestershire sauce
– ½ cup heavy cream
– 2 cups spinach
– 1 cup dry pasta (I used cavatappi)
– 1 teaspoon each: oregano, basil, parsley, mustard powder
– Pinch of red pepper flakes
– Salt/pepper to taste

For Serving
– 8 oz ricotta cheese
– ½ cup Parmesan cheese
– Red pepper flakes
