Baked Stuffed Flank Steak

Preheat your oven to 375°F (190°C).
Lay the flank steak flat on a cutting board and carefully butterfly it by slicing it horizontally, but not all the way through.
In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
Remove from heat and mix in the sun-dried tomatoes, crumbled feta cheese, and toasted pine nuts. Season with basil, oregano, salt, and pepper.
Spread the stuffing mixture evenly over one side of the flank steak.
Roll up the steak tightly, securing it with toothpicks or kitchen twine.
Place the rolled steak seam-side down in a baking dish. Drizzle with balsamic vinegar.
Bake in the preheated oven for 25-30 minutes, or until the steak reaches your desired level of doneness.
Let the steak rest for 10 minutes before removing toothpicks or twine and slicing.
