Chicken in Sauce!

Prepare the chicken:

Clean the chicken well. 🍗💧
Season the chicken with the Haitian Epis and salt. Marinate for at least 30 minutes, preferably overnight. 🌿
Brown the chicken:

In a large pot or Dutch oven over medium-high heat, add the oil and brown the chicken on both sides until nicely browned. Do not throw away the marinade. 🛢️🍗
Prepare the seasoned liquid:

While the chicken is browning, add water to the marinade container and stir to combine the liquids and spices. Reserve. 💧🌿
Remove the chicken:

Remove the chicken from the heat and place it on a plate. 🍽️
Brown the onion and garlic:

In the same pan, sauté the chopped onions and garlic until fragrant (about 45 seconds).
Add the tomato paste and peppers:

Add the tomato paste and a few pieces of pepper. Stir to combine well. 🍅🌶️
Deglaze with the seasoned liquid:

Deglaze with ¼ of the seasoned liquid. Then add the chicken and the juices from the dish. 🍗💧
Add the lemon juice, vinegar and herbs:

Add the lemon juice, cider vinegar, herbs, salt and pepper to taste, and the peppers. Stir gently. 🍋🌿
