Crispy Chicken Parmesan Rolls

Preparation: Season chicken slices with salt and pepper. Set up a dredging station with three shallow dishes: one for flour, one for beaten eggs, and one for a mixture of panko breadcrumbs and grated Parmesan cheese.

Dredging: Coat each chicken slice first in flour, then dip in egg, and finally coat thoroughly with the breadcrumb mixture.

Filling and Rolling: Place a slice of mozzarella on each breaded chicken piece. Roll tightly and secure with a toothpick if necessary.

Frying: Heat olive oil in a skillet over medium heat. Fry each roll until golden brown all around and cooked through, about 4-5 minutes per side.

Sauce and Cheese: Pour half the marinara sauce into a baking dish. Place fried chicken rolls in the dish, cover with remaining sauce, and top with any leftover mozzarella slices.

Baking: Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the cheese is bubbly and golden.

Garnishing and Serving: Sprinkle with chopped fresh basil before serving. Enjoy hot with a side of pasta or a crisp salad.
