Preheat the oven to 400°F (200°C) and line two large baking sheets with parchment paper.
Prepare Puff Pastry: Lay one puff pastry sheet on each baking sheet. Cut each sheet into 6 rectangles, totaling 12 pieces. Leave some space between each rectangle.
Egg Wash: In a small bowl, whisk the egg and milk together until smooth. Brush this mixture over the tops of the puff pastry rectangles. Avoid getting the wash on the cut edges to ensure proper puffing.
Bake: Place the pastries in the oven for 15-17 minutes, or until they puff up and turn golden brown. Allow them to cool for 5-10 minutes after baking.
Cream Cheese Filling: While the pastries cool, mix the cream cheese, sugar, and vanilla extract in a medium bowl until fully combined.
Assemble the Napoleons: Separate the top layer from the bottom layer of each cooled pastry. Spread 1 tablespoon of strawberry preserves on the bottom half of each rectangle, add 2 tablespoons of the cream cheese mixture, and top with 5-6 strawberry slices. Replace the top pastry layer and dust with confectioners’ sugar.
