Sauté:
In a pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
Simmer:
Add the chicken or vegetable broth and broccoli florets to the pot. Bring to a simmer and cook until the broccoli is tender, about 10-15 minutes.
Blend:
Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
Add Cheese and Cream:
Stir in the shredded cheddar cheese and heavy cream. Continue stirring until the cheese is melted and the soup is well combined.
Season:
Taste and add salt and pepper as needed. Serve hot.
