Flank Steak Fajita Pinwheels

Butterfly and pound flank steak.
Season and let it rest.
Sauté onions and peppers, then cool.
Layer steak with sauce, prosciutto, cheese, and veggies. Roll and tie.
Smoke at 350°F for 35 minutes.
Baste with butter and cook to 135°F internal temp.
Rest, slice, and serve!
