Golden, Crispy, and Filled with Sweet Peaches!

In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract, mixing well.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Gently fold in the diced peaches.
Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).
Carefully drop spoonfuls of batter into the hot oil, frying a few at a time to avoid overcrowding.
Fry the fritters for 3-4 minutes on each side, or until golden brown and cooked through.
Remove the fritters with a slotted spoon and drain on paper towels.
Dust with powdered sugar before serving.
