Honey Garlic Ribs

Preheat your oven to 300°F (150°C).
Remove the membrane from the back of the ribs. Pat the ribs dry with paper towels and season both sides with salt and pepper.
Place the ribs on a rack over a baking sheet lined with foil. Bake for 2.5 to 3 hours, or until tender.
While the ribs are baking, prepare the honey garlic sauce. In a saucepan, combine honey, soy sauce, ketchup, apple cider vinegar, minced garlic, brown sugar, ginger, and chili flakes (if using). Bring to a simmer over medium heat.
Simmer the sauce for about 10-15 minutes, or until it thickens slightly. If using cornstarch, mix cornstarch with water to make a slurry and add to the sauce to thicken further, cooking for another 2-3 minutes.
Once the ribs are done baking, remove them from the oven and brush generously with the honey garlic sauce.
Preheat a grill to medium-high heat. Transfer the ribs to the grill and cook for 5-7 minutes per side, basting with additional sauce, until caramelized and slightly crispy.
Remove from the grill and let rest for a few minutes before slicing. Serve with remaining sauce.
