Maple Cayenne Pork Belly Burnt Ends

Preheat your smoker or grill to 275°F (135°C).
Cut the pork belly into 1-inch cubes.
In a bowl, mix together the cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and black pepper.
Toss the pork belly cubes in the maple syrup, then coat them evenly with the spice mixture.
Arrange the seasoned pork belly cubes on the smoker or grill grates, ensuring they are spaced out.
Smoke the pork belly cubes for about 2 to 3 hours, or until they are tender and have a nice bark on the outside.
Optional: Brush the pork belly cubes with BBQ sauce and continue to cook for an additional 30 minutes.
Remove from the smoker or grill and let them rest for a few minutes before serving.
