Pan-fried veal chop with rustic mustard sauce

Prepare your mustard sauce: in a small saucepan, heat 5 tbsp. of water with the spices and mustard seeds. Then, add the mustard, mix well with a small whisk, then add the crème fraîche. Mix well. Warm slightly then remove from the heat. Salt and pepper to taste.
Melt a little oil and butter in a frying pan, add your veal chop, and cook over medium heat for 3-4 minutes. Turn it over, then continue cooking covered over low heat for another 4-5 minutes. Once cooked, salt and pepper, and set aside on a plate covered with aluminum foil.
Pour your mustard sauce into the same cooking pan and mix well while heating over medium heat. You can reduce the sauce a little to your liking.
Return your meat to the pan, heat gently in the sauce for 1 to 2 minutes.
