Savory Italian Braised Chicken with Olives and Herbs

Preheat your oven to 375°F (190°C).
Season the chicken thighs with salt and pepper.
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the chicken broth and diced tomatoes, scraping up any browned bits from the bottom of the skillet.
Stir in the green and black olives, dried oregano, dried basil, and dried thyme.
Return the chicken thighs to the skillet, skin side up. Spoon some of the sauce over the chicken.
Transfer the skillet to the preheated oven and bake for 35-40 minutes, or until the chicken is cooked through and the sauce is bubbling.
Remove from the oven and let rest for a few minutes before serving. Garnish with chopped fresh parsley.
