1. Preheat your oven to 425°F (220°C).
2. Wash the potatoes and cut them into thin strips, leaving the skin on for extra texture.
3. In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, ground black pepper, and sea salt.
4. Toss the potato strips in the oil and seasoning mixture until they are well coated.
5. Spread the fries in a single layer on a baking sheet lined with parchment paper, ensuring they are not touching too much.
6. Bake for 25-30 minutes, or until they are golden brown and crispy, turning them halfway through.
7. Once out of the oven, sprinkle the freshly chopped herbs over the fries while they are still hot.
