Smothered Chicken with Creamed Spinach, Bacon, and Mushrooms

Preheat the Oven:

Preheat your oven to 375°F (190°C).
Grease a 13″ x 9″ x 4″ deep baking dish with butter.
Season the Chicken:

Generously season both sides of the chicken breasts with salt, lemon pepper seasoning, and paprika.
Lay the chicken breasts flat-side down in the greased baking dish.
Bake for 15-20 minutes at 375°F.
Prepare the Creamed Spinach:

While the chicken bakes, heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
Add the spinach and cover, cooking for 1-2 minutes until wilted.
Stir in minced garlic and half and half, bringing to a boil.
Mix in shredded mozzarella cheese, and cook on high until the cheese melts (about 30 seconds). Reduce heat to low and stir until smooth (another 1 minute). Season with salt and remove from heat.
Cook the Mushrooms:

In a separate pan, heat 1 tablespoon of vegetable oil over medium-high heat.
Add sliced mushrooms and sauté for 1-2 minutes until caramelized. Do not salt.
Assemble the Smothered Chicken:

Remove the chicken from the oven after 15-20 minutes.
Top each chicken breast with creamed spinach, chopped bacon, caramelized mushrooms, and a slice of Pepper Jack cheese.
Return to the oven and bake uncovered for another 15-20 minutes until the chicken is thoroughly cooked and cheese has melted.
For a golden-brown top, broil for the last 2-4 minutes, watching closely to avoid burning.
