Prepare the Steak:

Dry the steaks with paper towels and season well with salt and pepper.
Heat a cast-iron skillet over medium-high heat and add olive oil.
Sear the steaks for 3-4 minutes on each side or until they reach your preferred level of doneness.
In the final minute of cooking, add butter, smashed garlic, and herbs if using. Baste the steaks with the herb-infused butter.
Remove the steaks and let them rest under a loose foil tent.
Create the Haunted Sauce:

Lower the heat to medium, add butter and minced garlic to the same skillet, and sauté until aromatic.
Deglaze the pan with bourbon and let it simmer for a minute or two to evaporate the alcohol.
Mix in the heavy cream, Dijon mustard, Worcestershire sauce, cayenne, salt, and pepper. Simmer until the sauce thickens slightly.
Stir in the Parmesan cheese and adjust the seasoning if necessary.
Serve:

Drizzle the rich bourbon garlic cream sauce over the rested steaks.
Garnish with chopped parsley and serve alongside your favorite sides.
