For the beef rolls:
1 lb. thinly sliced sirloin steak, pounded thinly, cut into 1″ x 3″ strips
2 tbsp. tablespoons avocado or olive oil, divided
3 peppers (different colors), cut into thin strips
1 large yellow onion, cut into strips
2-3 green onions, chopped green parts
Fresh parsley or cilantro, chopped
For the fajita seasoning:
1 tbsp. teaspoon chili powder
1 tbsp. teaspoon ground cumin
1 tbsp. teaspoon garlic powder
1/2 tsp. teaspoon dried oregano
1/2 tsp. teaspoon smoked paprika
1/2 tsp. teaspoon sea salt
1/4 tsp. teaspoon ground black pepper
