Season the roast beef with salt and pepper.
Roughly chop the onions and carrots.
To fry:
Heat a little oil in a large saucepan.
Sear the beef on all sides until nicely browned.
Remove the roast from the pot and set aside.
To fry the vegetables:
Fry the roughly chopped onions and carrots in the remaining frying fat until lightly browned.
Add the sugar and caramelize.
